Sonoran Enchilada, Or, As I Call It, Enchizagna, A Mexican Lasagna

Growing up on the West Coast, both myself and my parents, California born, Enchiladas are filling, rolled into a number of tortillas , and laid side by side in a pan. Then sauce and cheese are poured on and around them.

Down here in the Sonoran region however, things are different. It is much more like a lasagna, but with tortillas instead of pasta.
